The following recipe is mushroom risotto. I bet a lot of you guys love mushrooms as well. So first you have to melt 2 tablespoons of butter in a large saucepan over medium heat. Add 1 diced onion and cook until soft. Stir in 1 cup of arborio rice and cook for 1-10 minutes until the rice is lightly toasted. Gradually add 4 cups of chicken or vegetable broth. 1½ cup at a time, stirring constantly until the liquid is absorbed. Stir in 1 cup of sliced mushrooms and cook for 5-7 minutes until the mushrooms are tender. in half cup of grated Parmesan cheese and season with salt and pepper to taste.
