Ketosis happens when you hit 14 hours of fasting and not spiking your insulin. Some sources say 12 hours minimum. However, to make sure you're really getting in that ketosis and actually giving some time for it to do the thing that it needs to do before you eat and fuck it up, 14 hours is a good point. And if you drink black coffee or green tea while you're fasting, that's okay. It won't spike your insulin.
