I was actually just talking about this the other day. It's a struggle for sure. My son's pretty smart so he'll know if I like sneak in veggies in mostly anything but I have found that smoothies help. I put like some spinach in a smoothie and he has no idea so.
I've been wondering the same thing because my toddler will not eat any vegetables or fruits. Sometimes he'll eat carrots, but with my oldest I never had to worry with veggies and fruits with him. He always ate it.
A lot of times kids don't like veggies because they're not being introduced to them. So like hear me out. Instead of just giving your kid the veggie, let the kid play with the veggie. Like pick a veggie that they can eat.
It's a good way to activate their sensories so that way you can tell them like squish it or play with it or let's cut it together whatever that way it's being introduced in like a fun manner instead of eat this because it sustains you making it fun for you.
Before I was rudely interrupted, making it fun for kids is key. I also found that adding food coloring to fruits helps kids because like all of a sudden an apple can be whatever color like blue if they'd like or purple.

What I've done in the past is blend them in a blender and then mix it into the sauce with the pasta and they're like yummy pasta and I'm like yes veggies
